Blueberry Munchkins Recipe

Blueberry Stuffed Munchkins. Exploding blueberries in the middle, rolled in cinnamon sugar, just amazing. Perfect once-in-a-while Saturday morning breakfast. These are fast and easy to make as well. No need for any donut cutters. Nothing expensive, just delicious crispy goodness and love. There are very few foods as tempting and emotional as a donut.

Ingredients:

1/3 cup milk

2 tbs lemon juice

2 tbs shortening or butter

1/2 cup sugar

1 egg

2 cups white flour

1/2 tsp baking soda

1/4 tsp salt

1/2 tsp nutmeg

about 4 cups oil for deep frying

1/3 cup white sugar

1 tsp cinnamon

Directions:

  1. In a cup stir together the milk and lemon juice, set aside
  2. In a medium mixing bowl cream the shortening and sugar together, until all the sugar is moistened.
  3. Beat in the egg, mix well
  4. Add the flour, baking soda, nutmeg and salt
  5. mix dough until a slightly wet ball of dough forms
  6. dump the dough onto a floured surface and roll out to about 1/4 in thickness
  7. Cut out 3in. by 3in. squared of dough with a knife.
  8. Place two medium blueberries in the center of every square and roll the squares into balls around the blueberries. Roll well between your hands. Make sure there is no place for the blueberries to leak out from.
  9. Fry the munchkins in 350 degree F oil untill both sides are golden brown,
  10. In a wide plate mix together the 1/3 cup of white sugar and cinnamon.
  11. Roll the munchkins after being fried, into the cinnamon sugar and serve.
  12. Enjoy!

Dried Fruit Poached Pears Recipe

DSC00004This easy but elegant recipe is an amazing way to get rid of some raisins, dried apricots, dates, figs, or any dried fruit you have lying around. It brings together the bright, fruity, sweetness of pears with the woody, smoky notes of dried fruit. Don’t worry about the dried fruit going to waste, you can use them after their use is done in this recipe, in cookies, breads, cakes, and ice cream. Dried Fruit Poached Pears make a great super easy after brunch dessert!

Ingredients:

5-7 bosc or anjou pears

1 cup dried fruit (e.g. raisins, dried apricots, dried figs, etc…)

3 cloves

1 cinnamon stick

2 star anise

1 cup brown sugar

6 cups water

1/2 tsp salt

Directions:

Add the water, brown sugar, star anise, cinnamon, cloves, and dried fruit in a medium pot over medium high heat. Bring to a boil, stirring frequently. Set aside to steep off of the heat for at least 2 hours.

Strain out the dried fruit and spices. Bring the liquid to a boil in the same pot while you peal your pears.

For a smoother looking finished pear, after peeling, lightly scrub each pear with a clean sponge to get rid or ridges.

Place the peeled pears in the boiling spiced water and lower the heat to medium low. Boil the pears for 10 minutes, then flip the pears and boil them for another ten minutes. Serve warm or chilled with a scoop of ice cream! Enjoy!

Easy Cotton Candy Ice Cream Recipe

Finally a cotton candy ice cream recipe using NO cotton candy extract!! Only cotton candy, so no need to wait for expensive extracts to come in the mail just for some ice cream!! This creamy ice cream is much richer than anything you will find in a store! And it’s so easy to make even without an ice cream machine!

Ingredients:

12 egg yolks (you can use as little as 6, but it won’t be as rich)

1/4 cup sugar

1/4 tsp salt

2 cups heavy cream

6 oz package of cotton candy (one color is preferable) [see note]

2 tbs white sugar

2 cups milk

1 tsp vanilla extract

Cotton candy for garnish

Note: Cotton candy usually comes in 3 oz packages. If you only fine 4 oz bags or containers, use a total of 8 oz cotton candy and omit the 2 tbs sugar.

Directions:

In a large bowl whisk the 1/4th cup of sugar with the egg yolks until no more sugar is visible.

In a medium pot over medium low heat dissolve the cotton candy and 2 tbs sugar into the heavy cream and heat until simmering.

Slowly drizzle a small amount of the heavy cream mixture into the egg yolks while whisking vigorously, and keep slowly adding until the egg yolk mixture is thin. Pour the whole mixture back into the pot and mix continuously over low heat until the mixture has thickened

Once it has thickened, strain the mixture back into the bowl and add your milk and vanilla extract. Follow your manufacturer’s directions on you ice cream machine to freeze to your desired consistency.

Or if you don’t have an ice cream machine just put the entire bowl into your freezer for about 1 1/2 hours. Then take it out and blend it with a hand held blender, or mixer and freeze for another 1/2 an hour. Repeat the process every half an hour until your desired consistency is reached. Garnish with more cotton candy!! Enjoy!

Easy Homemade Brown Sugar Recipe

images Buying bags and bags of brown sugar can be expensive when you’re a hardcore baker… With a jar of dark molasses and some plain sugar, you can whip up tons in no time. Great for those times when you don’t have a bag of brown sugar lying around but you want some goddamn cookies. Now. This is actually all brown sugar is! You can easily make both dark or brown sugar.

Ingredients:

1 cup white sugar

1 tbs molasses (For dark brown sugar use 2 tbs for every cup)

Note: You can easily multiply the recipe and store some in an airtight container where you would usually store brown sugar. Here, ill save you some math:

For 4 cups of light brown sugar use one-fourth of a cup of molasses (or half a cup for dark) Multiply using this formula accordingly

Directions:

If you have a food processor with a plastic blade that isn’t sharp place the sugar and molasses into the base and blend for 2 minutes until it is completely combined.

If your food processor doesn’t come with a plastic blade or you don’t have a processor at all, no problem, just add the sugar and molasses to a bowl and mix in with your hands until everything is combined and all the blobs of molasses are dissolved. CIMG0370

This will take about 5 minutes or more depending on how much you’re making. Store as you would store-bought brown sugar. Enjoy!… i guess.
